Regular readers might remember when I got on a farro soup kick back in the fall. The main vegetable in it is cavallo nero or black cabbage, very much like kale. That is out of season now so I can’t make the soup. And it has been a little warm for soup. So now it has become farro salad.
This was pretty tasty. There is pancetta in it to keep it from being totally healthy, along with green beans, asparagus, carrots and broccoli. And a healthy splash of olive oil. Hmmmm good.
